How to make your biscuits
Use your Christmas spoon to mix together the 150g of butter and 150g of light brown sugar, it’s a good idea to get the butter out of the fridge for a while before you start so that it’s soft and easier to stir.
It should feel smooth and fluffy once it’s mixed in – if you can see the colour it will look lighter in colour.
Add your Christmas spices and stir them in – we’ve chosen 1 teaspoon of ginger and 1 teaspoon of cinnamon but you can choose your favourites!

Crack the egg into a bowl and check for any egg shell. Then add the egg and the 300g of plain flour into your mix. Make sure you always wash your hands if you touch raw egg. Stir the mixture together.
You can use the spoon at first but once it starts to come together you can start using your hands to form it into a doughy feeling ball. If it feels too sticky just add some more flour.

Wrap the ball in some cling film and put it in the fridge for around 20-30 minutes – that’s enough time to listen to about 10 of your favourite Christmas songs!
Ask an adult to pre-heat the oven to 200°C, fan 180°C, gas 6.
Once your mixture is cooled, sprinkle a clean surface with some flour so your mixture doesn’t stick to it and rub some flour onto a rolling pin too. We actually found our mixture not too sticky and we didn’t need flour for ours, so adjust depending on your own dough.
Roll your dough out until it is about 5mm thick (about the thickness of a pencil).
Use your biscuit cutter to cut out your shapes (you can use the stamp too if you have one to give them a textured finish – press it down gently inside the cutter), and place them onto a baking sheet on a baking tray.
If you have left over dough, use your hands to roll it back into a ball and then use the rolling pin to roll it out again and cut out more shapes.

Ask an adult to place the tray into the centre of the hot oven and set the timer for 10 minutes. After 10 minutes check the biscuits with the adult as it will be very hot. They may need to cook for an extra 2 to 5 minutes, they should be golden brown in colour. If you can’t see the colour ask an adult to lift one out so you don’t touch anything hot – they should feel firm and not squishy.
Once they are cooked, place them on a wire rack to cool.

You can either skip straight to the eating part or decorate your biscuits! If you have silver balls you could decorate your biscuits with a braille message!
We’d love to see some photos of your finished biscuits, let us know how you get on!
Changemaker Lydia’s baking tip!

Don’t be afraid to use your hands. As someone who bakes with no useable vision, I’m always feeling what’s in my mixing bowl to check the consistency, or using my hands to ensure that the batter doesn’t fall off the spoon when I’m transferring it from one container to another. As long as you wash your hands thoroughly throughout, I find that using my hands is vital whenever I’m in the kitchen.
